A Legendary New Orleans Dining Experience
New Orleans’ restaurant leader of the culinary old guard, Arnaud’s Classic Creole Restaurant, serves up tradition in a menu that benchmarks Creole classics like Oysters Ohan, Shrimp Creole, and Breast of Chicken Rochambeau. Many of these dishes originate from Arnaud’s, including Shrimp Arnaud, a favorite created 80 years ago that features chilled boiled shrimp marinated in a homemade remoulade sauce.
Tommy DiGiovanni, Arnaud’s native-born Executive Chef, is fiercely dedicated to the fundamentals of his Creole heritage, always enlivening a menu bursting with seasonal flavors. “Creole cooking is an exuberant, living cuisine,” emphasizes Arnaud’s proprietor Archie Casbarian. “We continuously evolve as the kitchen takes advantage of Louisiana’s rich bounty of fresh seafood, shellfish, locally-grown produce, and culinary talent.”
From Arnaud’s rich history that dates back to 1918, to their rich house sauces, elegant banquet rooms, ghost stories, live Jazz music, cigar bar, and celebrity clientele including Loretta Young, Bob Hope, Arthur Godfrey, President George Bush, Kirk Douglas, Clint Eastwood, Ali MacGraw, Garth Brooks, Dolly Parton, Julio Iglesias, Willard Scott, David Brinkley, Terry Bradshaw, and Bette Midler (who is responsible for instituting one of the most popular appetizers on Arnaud's menu “Oysters Arnaud”), and many others who line the corridor and stairway walls, Arnaud’s is a local living legend.
Arnaud’s ruddy, sharp sauce has a colorful history of its own. Count Arnaud’s daughter, Germaine, believed its recipe to be so valuable that she excluded it from her deal with current owner Casbarian, insisting instead that her personal cook make it, bottle it, and sell it to the restaurant. This worked fine until Germaine died. Then, after a series of buckpasses, an officer in the trust department of a large New Orleans bank assigned to execute Germaine's estate found himself making Arnaud sauce. Soon afterward, a deal was made with the heirs to allow Arnaud's to make its own Arnaud sauce.

In 1918, a colorful French wine salesman named Arnaud Cazenave opened the grand restaurant that bears his name. Count Arnaud (as he came to be called, without any bona fide claim to the title) practiced a brilliant new approach to the serving of food and drink. He became so influential in his business that it can be said that the entire New Orleans restaurant community reflects, to one degree or another, his ideas. And the style he set inspires everything Arnaud’s does to this day.
Arnaud's menu and recipes benchmark the Creole classics such as Shrimp Arnaud, a favorite dish that was created at Arnaud’s over 80 years ago. Now, you can enjoy this delicious recipe at home.
